I am currently down in Dallas, TX visiting my sister and this has inspired me to share Chris Fox's Chicken Fajita recipe. To reduce the carbohydrates (Glycemic Index) and sugars I normally make this into a salad and Chris eats his fajitas on whole wheat tortillas. You can do what makes sense for you.
Ingredients for Fajitas:
- 3 boneless chicken breast halves, cut in thin strips
- 1 medium onion, cut in half and then into wedges
- 2 yellow, red, or green bell peppers, seeded and cut in strips
- 1 Tablespoon Garlic Powder (to taste)
- 3 Tablespoons Chili Powder (to taste)
- Black Pepper (to taste)
Whole Wheat Tortilla's OR Salad ingredients:
- 4 whole wheat tortillas, warmed (Chris puts his in the microwave for about 10 seconds)
- 1/2 cup sour cream
- 1 cup of Salsa (check the sugar and don't use if it has too much for you)
- 2-3 cups of lettuce chopped
- 1/4 red onion chopped
- 1 medium tomato or 10 cherry tomatoes, chopped small
- 1/2 cup cucumbers
- 1/2 chopped red pepper
- 1 cup of finely shredded Mexican cheese or taco cheese
- (optional) avocado/guacamole
Preparation:
Heat up a skillet on medium heat; add the chicken strips, onion and peppers to the skillet as you cut them up, stir occasionally to make sure nothing is sticking. (if your pan sticks make sure to cover it with non-stick spray) Cook for about 2 minutes and add the chili powder, garlic powder, and black pepper. Cover with a lid, stir occasionally, and cook until chicken is done and vegetables are soft. Serve with warm whole wheat tortillas, sour cream, guacamole/avocado, shredded cheese, and chopped tomatoes. For my Judi Fajita Salad I serve the Fajita mix on top of chopped lettuce, red onion, cucumbers, red pepper, shredded cheese, sour cream, guacamole/avocado, and salsa. I hope you enjoy!
